Chicken Feta and Pepper Quiche


Ingredients:
  • 1 cup (250 mL) Janes Oven Roasted Carved Chicken Breasts
  • 1 pie shell, unbaked – 9" (23cm)
  • 1 cup (250 mL) feta cheese, crumbled
  • 1 green onion, chopped
  • 1/2 cup (125 mL) sweet red pepper strips
  • 1 cup (250 mL) Naturegg Break-Free Omega 3 Liquid Eggs, well shaken
  • 1 cup (250 mL) half & half (10%) cream
  • salt and pepper to taste
Instructions:

Pan fry or microwave chicken breast strips according to package directions. Cool and dice.

Scatter feta, chicken, onion and peppers evenly over pie shell.

Beat remaining ingredients together to blend. Pour over filling in pie shell.

Bake on lower oven rack at 400ºF (200ºC) for 30 to 35 minutes or just until set and pastry is golden.

Let stand 10 minutes before slicing.
